2. ALU VARDHA (AAH-LOO VARD-DHA) (Potato Fritters)

These are made of potato filling in chick pea flour - deep fried.

 

Batter Ingredients

150 grams pea or chick pea flour    
100 grams white flour    
½ teaspoon chilli powder turmeric salt
1 teaspoon green herb stock ground cumin ground coriander
2 teaspoons crushed garlic crushed ginger garam masala
1 tablespoon soy sauce oil  
2 cups oil for frying    

 

Filling Ingredients

3 large boiled potatoes    
½ teaspoon chilli powder turmeric  
1 teaspoon green herb stock ground cumin ground coriander
  crushed garlic crushed ginger garam masala

 

Method

Mix all the batter spices, flour and oil with water into a thin runny dough.

Mash the boiled potatoes and mix with the filling ingredients in another bowl. Make into round balls (about 2 cm in diameter).

Dip balls into batter ensuring they are completely covered with the batter. Deep fry on medium heat until golden brown.

If the filling comes out while in the oil, the batter is too runny - add more flour.

Serve hot with chutney or raita. Alu Vadha also goes well with beer and salsa dips.
